Ingredients
  

  • 1 lb beef sirloin or tenderloin, sliced into thin strips
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • ½ cup beef broth
  • 1 teaspoon Dijon mustard
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup sour cream
  • 2 tablespoons all-purpose flour (optional, for thickening)
  • Fresh parsley, chopped (for garnish)
  • Egg noodles, rice, or mashed potatoes (for serving)

Instructions
 

  • In a large skillet, heat olive oil over medium-high heat. Add the sliced beef and cook until browned on all sides, about 4-5 minutes. Remove the beef and set aside.
  • In the same skillet, add the chopped onion and cook for 3-4 minutes until softened. Add garlic and cook for 1 minute.
  • Add the sliced mushrooms and cook for another 5 minutes, until they release their moisture and become golden brown.
  • Stir in the beef broth, Dijon mustard, thyme, salt, and pepper. Bring to a simmer and let it cook for 5 minutes.
  • If you prefer a thicker sauce, stir in the flour and cook for 1 minute. Then, gradually add the sour cream, stirring until the sauce is smooth.
  • Return the beef to the skillet, stirring to coat it in the sauce. Cook for an additional 3-4 minutes until the beef is heated through.
  • Serve the Beef Stroganoff over egg noodles, rice, or mashed potatoes. Garnish with fresh parsley and enjoy!
