Ingredients
  

  • 2 cups cooked rice (preferably cold)
  • 1 chicken breast, diced
  • 2 tablespoons soy sauce
  • 1 tablespoons sesame oil
  • ½ cup frozen peas and carrots
  • 2 eggs, beaten
  • ¼ cup green onions, chopped
  • 1 tablespoons butter
  • Salt and pepper to taste

Instructions
 

  • Heat sesame oil and butter in a large skillet or wok over medium heat.
  • Add diced chicken and cook until browned and cooked through.
  • Push the chicken to one side and scramble the beaten eggs on the other side of the skillet.
  • Add peas, carrots, and cooked rice to the pan, stirring to combine.
  • Pour soy sauce over the rice and mix well.
  • Season with salt and pepper, then garnish with green onions. Serve hot and enjoy!
