- 4 boneless, skinless chicken breasts
- ½ cup all-purpose flour
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 tablespoon unsalted butter
- ½ white grape juice
- 1 cup chicken broth
- 1 cup sliced mushrooms
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme (optional)
- Fresh parsley, chopped (for garnish)
Season the chicken breasts with salt and pepper, then dredge them lightly in flour, shaking off excess.
In a large skillet, heat olive oil and butter over medium heat. Add the chicken breasts and cook for 4-5 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
In the same skillet, add the sliced mushrooms and garlic. Cook for 3-4 minutes, until the mushrooms are softened.
