Ingredients
  

  • 2 cups cooked chicken, shredded (rotisserie chicken works great)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup red bell pepper, finely chopped
  • ½ cup onion, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 tablespoon olive oil
  • 4 flour tortillas
  • Salt and pepper, to taste
  • Salsa and sour cream, for serving (optional)

Instructions
 

  • In a bowl, combine the shredded chicken, cheddar cheese, mozzarella cheese, red bell pepper, onion, cumin, chili powder, salt, and pepper. Mix well to combine.
  • Heat a large skillet or griddle over medium heat and add a teaspoon of olive oil.
  • Place one tortilla in the skillet and spoon a quarter of the chicken mixture onto one side of the tortilla.
  • Fold the tortilla in half to cover the filling and cook for 2-3 minutes on each side, until golden brown and the cheese is melted.
  • Remove from the skillet and cut into wedges.
  • Repeat with the remaining tortillas and filling.
