- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 1 -inch piece of ginger, grated
- 2 cups canned chickpeas, drained and rinsed
- 1 can (14 oz) diced tomatoes
- 1 cup coconut milk
- 2 teaspoons curry powder
- 1 teaspoon ground cumin
- ½ teaspoon turmeric powder
- ½ teaspoon paprika
- ¼ teaspoon cayenne pepper (optional)
- Salt to taste

Heat the vegetable oil in a large skillet or saucepan over medium heat. Add the chopped onion and sauté until golden, about 5 minutes.
