- 3 lbs corned beef brisket
- 1 onion, quartered
- 2 cloves garlic, smashed
- 1 teaspoon black peppercorns
- 1 bay leaf
- 4 cups water
- 4 large carrots, peeled and cut into chunks
- 1 lb baby potatoes, halved
- 1 small head of cabbage, cut into wedges
- 2 tablespoons butter (optional)
- Fresh parsley, chopped (for garnish)
Place the corned beef brisket in a large pot. Add the onion, garlic, peppercorns, and bay leaf. Cover with water and bring to a boil over medium-high heat.
Reduce the heat to low and simmer for 2 hours, skimming off any foam from the surface.
After 2 hours, add the carrots and potatoes to the pot. Continue cooking for another 30 minutes.
Add the cabbage wedges to the pot and cook for another 20-30 minutes, until the vegetables are tender and the corned beef reaches an internal temperature of 190°F (88°C).
Remove the corned beef from the pot and let it rest for 10 minutes before slicing against the grain.
Serve the corned beef with the vegetables, topped with butter if desired, and garnish with fresh parsley.
