- 4 salmon fillets (skinless, about 6 oz each)
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- ½ cup chicken broth
- ⅓ cup grated Parmesan cheese
- 1 teaspoon Dijon mustard
- 1 tablespoon fresh lemon juice
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped
Heat the olive oil in a large skillet over medium heat. Season the salmon fillets with salt and pepper.
Add the salmon to the skillet and cook for 4-5 minutes per side, or until cooked through. Remove from the skillet and set aside.
