Ingredients
  

  • 4 salmon fillets (skinless, about 6 oz each)
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • cup grated Parmesan cheese
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions
 

  • Heat the olive oil in a large skillet over medium heat. Season the salmon fillets with salt and pepper.
  • Add the salmon to the skillet and cook for 4-5 minutes per side, or until cooked through. Remove from the skillet and set aside.
  • In the same skillet, melt the butter and add the minced garlic. Sauté for about 1 minute until fragrant.
  • Stir in the heavy cream, chicken broth, Parmesan cheese, and Dijon mustard. Bring the sauce to a gentle simmer, stirring until smooth and slightly thickened, about 3-4 minutes.
  • Add the lemon juice and adjust seasoning with salt and pepper to taste.
  • Return the salmon fillets to the skillet, spoon the sauce over them, and let them warm through for 2-3 minutes.
