Ingredients
  

  • 1 lb cod fillets, cut into portions
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs or panko
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • Salt and black pepper to taste
  • 1 cup vegetable oil for frying
  • Lemon wedges for serving

Instructions
 

  • Pat the cod fillets dry with paper towels and season with salt and black pepper on both sides.
  • Prepare three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with garlic powder and paprika.
  • Dredge each cod piece in the flour, dip into the egg mixture, and coat with the breadcrumb mixture. Press gently to ensure even coating.
  • Heat vegetable oil in a large skillet over medium-high heat. The oil should be about 1/4 inch deep.
  • Once the oil is hot, carefully place the cod fillets in the skillet. Fry for 3-4 minutes per side, or until golden brown and cooked through.
