Ingredients
  

  • 2 slices of bread (white, whole wheat, or sourdough)
  • 2 tablespoons unsalted butter
  • 2 slices of your favorite cheese (Cheddar, American, or a mix)
  • 1 tablespoon mayonnaise Optional (for extra crispiness)

Instructions
 

  • Heat a non-stick skillet or griddle over medium heat.
  • Butter one side of each slice of bread. If you like extra crispy bread, spread a thin layer of mayonnaise on the outside of each slice as well.
  • Place one slice of bread, buttered side down, onto the heated skillet. Add the slices of cheese on top.
  • Top with the second slice of bread, buttered side up.
  • Grill for 2-3 minutes on each side, or until golden brown and the cheese is melted.
  • Remove from the skillet and cut the sandwich in half. Serve hot.
