- 10-12 fresh hot chili peppers (such as jalapeños, serranos, or habaneros)
- ½ cup white vinegar
- ½ cup water
- 2 garlic cloves, minced
- ½ teaspoon salt
- ¼ teaspoon sugar (optional)
- 1 teaspoon lime juice (optional)
Remove the stems from the chili peppers and slice them in half. If you prefer a milder sauce, remove the seeds.
In a medium saucepan, combine the peppers, vinegar, water, garlic, salt, and sugar (if using). Bring to a simmer over medium heat.
Cook for 10 minutes, allowing the peppers to soften and the flavors to meld.
Remove from heat and let cool slightly. Carefully blend the mixture until smooth using an immersion blender or a regular blender.
