Ingredients
  

  • 10-12 fresh hot chili peppers (such as jalapeños, serranos, or habaneros)
  • ½ cup white vinegar
  • ½ cup water
  • 2 garlic cloves, minced
  • ½ teaspoon salt
  • ¼ teaspoon sugar (optional)
  • 1 teaspoon lime juice (optional)

Instructions
 

  • Remove the stems from the chili peppers and slice them in half. If you prefer a milder sauce, remove the seeds.
  • In a medium saucepan, combine the peppers, vinegar, water, garlic, salt, and sugar (if using). Bring to a simmer over medium heat.
  • Cook for 10 minutes, allowing the peppers to soften and the flavors to meld.
  • Remove from heat and let cool slightly. Carefully blend the mixture until smooth using an immersion blender or a regular blender.
  • Taste and add lime juice (optional) for an extra zing. Adjust salt and sugar if needed.
