Ingredients
  

  • 1 cup dark chocolate (60-70% cocoa), chopped
  • 3 large eggs, separated
  • ¼ cup granulated sugar
  • ½ teaspoon vanilla extract
  • ½ cup heavy whipping cream, chilled
  • A pinch of salt

Instructions
 

  • Melt the Chocolate: Place the chopped chocolate in a heatproof bowl over a pot of simmering water (double boiler). Stir until melted and smooth. Remove from heat and let it cool slightly.
  • Prepare the Egg Yolks: In a separate bowl, whisk the egg yolks with vanilla extract until smooth. Slowly add the melted chocolate to the yolks, mixing well to combine
  • Whip the Cream: In a chilled bowl, whip the heavy cream until soft peaks form. Set aside.
  • Beat the Egg Whites: In another clean bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add sugar, beating until stiff peaks form.
  • Fold Everything Together: Gently fold the whipped cream into the chocolate mixture until combined. Then, carefully fold in the beaten egg whites in two additions, ensuring not to deflate the mixture.
  • Chill and Serve: Spoon the mousse into serving glasses or bowls. Refrigerate for at least 2 hours or until set.
