Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 cup dried lentils, rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth (or water)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon turmeric (optional)
  • 1 bay leaf
  • Salt and freshly ground black pepper to taste
  • 2 cups spinach or kale, chopped (optional)
  • 1 tablespoon lemon juice (optional)

Instructions
 

  • In a large pot, heat olive oil over medium heat. Add chopped onion, garlic, carrots, and celery. Cook, stirring occasionally, for about 5 minutes, until softened.
  • Add the lentils, diced tomatoes, vegetable broth, cumin, coriander, turmeric, bay leaf, salt, and pepper. Stir to combine.
  • Bring the mixture to a boil, then reduce heat and let simmer uncovered for 30-35 minutes, or until the lentils are tender.
  • If using spinach or kale, add it to the soup and cook for an additional 5 minutes.
  • Stir in the lemon juice, if desired, for a fresh burst of flavor.
