Ingredients

  • 12 oz penne pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • ½ teaspoon red pepper flakes (adjust to taste)
  • 1 can (14.5 oz) crushed tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional)

Instructions

  • Cook the penne pasta according to the package instructions. Drain and set aside, reserving a little pasta water.
  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for 1-2 minutes until fragrant.
  • Stir in the crushed tomatoes and tomato paste, then add oregano, salt, and pepper. Simmer the sauce for 10-12 minutes, allowing it to thicken slightly.
  • Add the cooked penne to the sauce, tossing to coat evenly. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.
  • Serve warm, garnished with chopped parsley and grated Parmesan cheese, if desired.

Notes

Optional: For an extra kick, add more red pepper flakes or a splash of hot sauce.
