Ingredients
  

  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup cooked chickpeas (or black beans)
  • 1 avocado, sliced
  • ¼ cup red onion, finely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish

Instructions
 

  • In a medium saucepan, bring the quinoa and water (or broth) to a boil. Reduce heat, cover, and simmer for 15 minutes, or until the quinoa is fluffy and the liquid is absorbed. Let it cool slightly.
  • Prepare the dressing by mixing olive oil, lemon juice, cumin, salt, and pepper in a small bowl.
  • In a large mixing bowl, combine the cooked quinoa, cherry tomatoes, cucumber, chickpeas, red onion, and avocado slices.
  • Drizzle the dressing over the quinoa mixture and toss gently to combine.
