- 1 cup quinoa, rinsed
- 2 cups water or vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup cooked chickpeas (or black beans)
- 1 avocado, sliced
- ¼ cup red onion, finely chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh parsley or cilantro for garnish
In a medium saucepan, bring the quinoa and water (or broth) to a boil. Reduce heat, cover, and simmer for 15 minutes, or until the quinoa is fluffy and the liquid is absorbed. Let it cool slightly.
