Ingredients
  

  • 4 slices of crusty bread (sourdough or baguette work well)
  • 200g raclette cheese, sliced
  • 2 tablespoons butter
  • 2 slices of cooked ham or turkey (optional, for added protein)
  • ½ small onion, thinly sliced (optional)
  • Freshly ground black pepper
  • Fresh herbs (like thyme or parsley, optional for garnish)

Instructions
 

  • Prepare the Bread: Butter one side of each slice of bread. This will be the side that goes on the pan to get crispy and golden.
  • Assemble the Sandwich: On the unbuttered side of two slices of bread, layer the slices of raclette cheese. Add a slice of cooked ham or turkey (optional) and a few slices of onion if desired. Top with the other slices of bread, buttered side facing out.
  • Grill the Sandwich: Heat a skillet or grill pan over medium heat. Place the sandwich on the pan and cook for 2-3 minutes, pressing lightly with a spatula, until the bread is golden brown. Flip the sandwich and cook the other side for another 2-3 minutes, until the cheese is fully melted and the bread is crispy.
  • Serve: Once the sandwich is golden and the cheese is melted, remove it from the pan. Cut in half and serve immediately, garnished with fresh herbs if desired.

Notes

Optional Variations:
  • Add some sautéed mushrooms, pickles, or arugula for extra flavor.
  • Use different cheeses like Gruyère or Emmental for a twist on the classic raclette.
