Ingredients
  

  • 4 large bell peppers (any color)
  • 1 cup cooked rice (white or brown)
  • ½ pound ground beef or turkey (optional, can substitute with beans for vegetarian)
  • 1 cup diced tomatoes (canned or fresh)
  • ½ cup corn kernels
  • ½ cup black beans (optional)
  • ½ cup shredded cheddar or mozzarella cheese
  • 1 small onion, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon cumin
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions
 

  • Preheat your oven to 375°F (190°C) and grease a baking dish.
  • Slice the tops off the bell peppers and remove seeds and membranes. Place them upright in the baking dish.
  • Heat olive oil in a skillet over medium heat. Add onion and cook until softened. If using ground meat, add it to the skillet and cook until browned.
  • Stir in the rice, diced tomatoes, corn, black beans (if using), garlic powder, paprika, cumin, salt, and pepper. Mix well and cook for 2-3 minutes.
  • Stuff each bell pepper with the rice mixture and top with shredded cheese.
  • Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
