- 4 large bell peppers (any color)
- 1 cup cooked rice (white or brown)
- ½ pound ground beef or turkey (optional, can substitute with beans for vegetarian)
- 1 cup diced tomatoes (canned or fresh)
- ½ cup corn kernels
- ½ cup black beans (optional)
- ½ cup shredded cheddar or mozzarella cheese
- 1 small onion, finely chopped
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon cumin
- Salt and pepper to taste
- 1 tablespoon olive oil
Preheat your oven to 375°F (190°C) and grease a baking dish.
Slice the tops off the bell peppers and remove seeds and membranes. Place them upright in the baking dish.
Heat olive oil in a skillet over medium heat. Add onion and cook until softened. If using ground meat, add it to the skillet and cook until browned.
Stir in the rice, diced tomatoes, corn, black beans (if using), garlic powder, paprika, cumin, salt, and pepper. Mix well and cook for 2-3 minutes.
Stuff each bell pepper with the rice mixture and top with shredded cheese.
Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
