Ingredients
  

  • 8 oz elbow macaroni
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 2 cups shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • Salt and freshly ground black pepper to taste
  • ¼ cup grated Parmesan cheese (optional)
  • 1 tablespoon butter (for topping, optional)

Instructions
 

  • Cook the elbow macaroni according to the package instructions. Drain and set aside.
  • In a medium saucepan, melt the butter over medium heat. Once melted, add the flour and whisk to create a roux. Cook for 1-2 minutes until golden.
  • Gradually pour in the milk while whisking continuously to prevent lumps. Cook the mixture for 5-7 minutes until it thickens.
  • Stir in the shredded cheddar cheese and mozzarella cheese, and continue stirring until the cheese is melted and the sauce is smooth.
  • Season with garlic powder, onion powder, salt, and pepper to taste.
  • Add the cooked macaroni to the sauce and toss to coat.
  • If desired, top with grated Parmesan cheese and a tablespoon of butter. Serve warm.

Notes

Optional: For a baked version, transfer the mac and cheese to a greased baking dish, top with extra cheese, and bake at 350°F (175°C) for 10-15 minutes until bubbly and golden.
