Ingredients
  

  • 4 small flour tortillas
  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • ½ cup diced bell pepper (any color)
  • ½ cup diced onion
  • ½ cup cooked bacon, sausage, or vegetables (optional)
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • Salt and freshly ground black pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions
 

  • Preheat the oven to 375°F (190°C). Grease a 9-inch pie dish or baking dish.
  • Cut the tortillas into quarters and layer them evenly on the bottom of the prepared baking dish.
  • In a bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper.
  • Add the diced bell pepper, onion, and any additional ingredients like cooked bacon or vegetables to the egg mixture.
  • Pour the egg mixture over the tortillas, ensuring everything is well coated.
  • Sprinkle the shredded cheddar cheese on top of the egg mixture.
  • Bake for 20-25 minutes or until the eggs are set and the top is lightly golden.
  • Let the quiche bake cool for a few minutes before slicing and serving. Garnish with fresh cilantro if desired.

Notes

Optional: For extra flavor, add salsa or sour cream on the side.
