Ingredients
  

  • 2 large boneless, skinless chicken breasts (cut in half lengthwise)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1 teaspoon red pepper flakes (optional)
  • 2 cups fresh spinach
  • 1 tablespoon butter

Instructions
 

  • Prepare the Chicken:
    Season the chicken with salt, pepper, garlic powder, and Italian seasoning.
  • Cook the Chicken:
    Heat olive oil in a large skillet over medium-high heat.
    Sear the chicken for 4-5 minutes per side until golden brown and cooked through. Remove and set aside.
  • Make the Sauce:
    In the same skillet, add butter and sauté the garlic until fragrant (about 30 seconds).
    Stir in the sun-dried tomatoes, heavy cream, chicken broth, Parmesan cheese, and red pepper flakes.
    Let the sauce simmer for 3-5 minutes until it thickens.
  • Combine Everything:
    Add the spinach to the sauce and stir until wilted.
    Return the chicken to the skillet and let it simmer in the sauce for 5 minutes.
  • Serve and Enjoy:
    Garnish with extra Parmesan cheese and fresh basil if desired.
    Serve with pasta, rice, or roasted vegetables.
